Step 1: We recommend starting with a 1 to 15 coffee to water ratio. In other words, for every 1 gram of coffee, add 15 grams of water. Adjust this according to your taste but don’t exceed 1 to 17 grams of coffee.

Step 2: Grind your coffee to a medium coarse grind.

Step 3: For lighter roasted coffee, make sure to use 205F water. For medium to darker roasted coffee you can start at 203F and adjust down as needed.

Step 4: Add roughly 2 to 3 times the amount of water to coffee to bloom the coffee. Make sure you saturate all the grounds! Swirl or stir as needed. Wait 30-45 seconds.

Step 5: Add the remaining water in multiple pours, shooting for a brew time of 3:30 to 4:30 minutes. After the final pour, swirl the chemex lightly a few times to ensure a flat bed of coffee grounds. Adjust your grind size as needed.
