Popayán Decaf comes from the highlands of Cauca, Colombia, where the Andes mountains create stable growing conditions that produce naturally sweet, citrus-forward coffees. Sourced from about 75 small farmers with whom long-term partnerships and quality premiums are maintained, this decaf begins as carefully selected, washed coffee dried on raised beds to preserve clarity and flavor. The caffeine is removed using a natural sugar-cane Ethyl Acetate process, which enhances sweetness while keeping the coffee’s true character intact. The result is a cup with notes of red fruits, sugar cane, mandarin, and chocolate—comforting, clean, and satisfying without the caffeine.
