Hand-picked at peak ripeness, the cherries undergo careful sorting and a controlled 30-hour underwater fermentation, which enhances sweetness and clarity. After pulping and a meticulous washed process using eco-friendly water filtration, the coffee is dried slowly on raised beds for optimal quality. The result is a beautifully structured cup with notes of bergamot, floral tones, panela, and chocolate, showcasing the vibrant character of this rare Colombian variety.
